Today I am happy to report that the leftovers reheat deliciously well. Double leftovers, really, since the ‘role itself was made mostly with leftover red rice I made for burritos on… Monday night maybe? I don’t really remember, and will now make the inevitable “but it was last year” excuse. I cooked too much rice then with this recipe in mind, and yesterday night I cooked some wild rice just to give the casserole one extra texture (I’m thinking my next attempt will also involve some celery). Also, here is a cute American Elf comic about making casserole with leftover rice. I’ve been really into American Elf these past few days. Yay webcomic cuteness! And, y’know, I could do a lot worse than James Kochalka for daily-post commitment inspiration. But I digress.
