Monkey Monday: sugar high edition (with pictures!) 16 June 2008 9:48 am
Posted by Tracy in : family, pictures, baking, dessert, friends , trackbackSo Piett and Jen’s visit provided me with an opportunity to use up some of the ridiculous overstock in our pantry, which quickly turned into an excuse to make what Peter and I refer to as “a big, dumb dessert” — in this case, white cake with strawberry-almond filling and buttery white frosting:
“Hey kids,” I said, “we’ve got way too much powdered sugar. What should we use it on?” Well, frosting uses a lot of sugar, and Jen ransacked Baking Illustrated and found the Classic White Layer Cake with Butter Frosting and Raspberry-Almond Filling. We substituted strawberry jam for raspberry, and amaretto for almond extract. End result:
In this shot, Peter threatens to cut the cake into four huge pieces while Piett and Jen eagerly look on (and yes, that’s the DVD menu for Ratatouille on the laptop screen in the background; we had to distract ourselves while the cake cooled down to a frosting-friendly temperature). Result: the cake was SO SWEET we needed to make ice cream to go with it on subsequent eatings. Oh, darn, homemade cake and ice cream! Life is sooooo hard. Here’s hoping your Mondays are at least as fun and easy as cake and ice cream.
